Soba is the Japanese word for buckwheat. Roasted buckwheat kernels are made into a grain tea called sobacha. It has a delicious nutty, malt flavor, and no theine (caffeine). Buckwheat contains all eight essential amino acids, and antioxidants, including rutins and thiamine. It was discovered that high blood pressure, heart disease, hardening of the arteries, and diabetes could be prevented by regularly eating and drinking thiamine-rich soba and soba-cha. Soba-cha can be eaten as it is. Its great on top of salads or soups, or in bakings.
